The Drunken Reindeer

WHAT YOU’LL NEED:

45ml White Rum
60ml Sparkling Wine
50ml Pomegranate Juice
15ml Lime Juice
10ml Grenadine Syrup
Sprig of Rosemary
Marshmallow
Cherry

NOW WHAT:

  1. Muddle Rosemary in the cocktail shaker.
  2. Add fresh pomegranate juice, grenadine syrup (for color), lime juice and White rum.
  3. Shake the ingredients well and rim a wine glass with colored castro sugar.
  4. Add cracked ice in the glass and pour the drink over.
  5. Top up with sparkling wine and garnish with Marshmallow, rosemary, and cherry in an ice cup.

WHAT YOU’LL NEED:

45ml Tanqueray London Dry
15ml Clarified uchuvas syrup
20ml Lime juice
20ml Vermouth extra dry Martini
15ml Dye of reduced uchuva juice (on top)
15ml Dye of reduced Isabella grape juice (on top)

Club soda

NOW WHAT:

  1. Shake the ingredients and serve on heaping ice.
  2. Finish with crushed ice and dye with fruit reductions by pouring on top.
  3. Decorate with three Isabella grapes

WHAT YOU’LL NEED:

1oz Courvoisier VS Cognac
.75oz Tuaca Liqueur
.25oz Charbay “Nostalgie” Black Walnut Liqueur
3 drops Bittermens Xocolatl Mole Bitters
Grapefruit Twist

NOW WHAT:

  1. Measure and combine all ingredients into a proper mixing glass and add cubed ice.
  2. Gently stir for approximately 30 rotations with bar spoon.
  3. Strain entire contents of mixing glass into a Double Rocks glass.
  4. Add one large cube of ice with tongs.
  5. Add the grapefruit garnish and serve.

Don’t let the frothy and delicate demeanor of this egg-white Chichita cocktail from W Santiago fool you: she really packs a punch.

WHAT YOU’LL NEED:

2oz Pisco Kappa
1.5oz Infusion of Viognier Wine with Apricot
1.5oz Tamaya Syrah (Grape Juice)
.25oz Simple Syrup
Dry Egg White

NOW WHAT:

  1. Prepare Cold Infusion of Viognier Wine with Apricot.
  2. Mix all ingredients, first Pisco Kappa, then the infusion of Viognier, then Grape Juice, Simple syrup, and lastly, the Dry Egg White.
  3. Put all together inside the cocktails shakers without ice (Dry Shake).
  4. Then shake all together with ice and double strain the mix with strainer directly to the Coupe glass.
  5. Garnish with a pink flower.

WHAT YOU’LL NEED:

40ml Calvados
10ml Frangelico
20ml Giffard Caramel Toffee
30ml Fresh Apple Juice
30ml Homemade Pineapple Puree
25ml Dolin Dry Vermouth
5ml Bacardi 151

Cinnamon Powder

NOW WHAT:

  1. Place crushed into glass to chill and rim one test tube 1 with cinnamon powder.
  2. Mix homemade pineapple puree with dry vermouth in test tube 1.
  3. Mix fresh apple juice with Giffard caramel toffee syrup with Frangelico in test tube 2.
  4. Place dried pineapple slice on top of test tube 4, top up with one sugar cube and place test tube 1 into test tube 3.
  5. Put a dash of Bacardi 151 on the sugar cube over test tube 4, set on fire.
  6. Pour test tube 2 into the test tube, over the sugar into test tube 4.
  7. Pour test tube 3 and test can 4 together into the chilled glass and serve.

WHAT YOU’LL NEED:

Base
50ml Rum Havana Club 7 year old
5ml Caper Carpano Antica Formula Vermouth
5ml Maraschino Cocktail Cherries
5ml Chocolate Bitters

Cherry & Rosemary Pedro Ximenez infusion
20ml Pedro Ximenez
15gr Fresh cherries
15gr Rosemary

Cherry foam
2.5gr Gelatin
100ml Fresh still water
100ml Cherry puree
30ml Egg white
10gr White sugar

Garnish
Cherry “Nerds” candies
Slice Dehydrated grapefruit
25ml Cherry wood chips (for smoking gun)

NOW WHAT:

  1. Dilute the gelatin in the cold water and add the cherry puree, the egg whites and sugar to the diluted gelatin.
  2. Pour into the syphon and shake.
  3. Add a canister of N2O gas and leave it in the fridge for 3 hours
  4. Pour the Pedro Ximenez in a large glass, add the rosemary and the fresh cherries. Let infuse for 3 hours.
  5. Mix the rum, the cherry and rosemary infused Pedro Ximenez, the chocolate bitter, the Maraschino cherries and the vermouth together in a mixing glass, add ice cubes and stir.
  6. Pour the drink through a strainer in a rock glass with an ice ball and cover with a dehydrated grapefruit slice.
  7. Add the cherry foam from the syphon on top of the dehydrated grapefruit.
  8. Prepare a smoking gun with cherry wood chips in the barrel, light with a match to create the smoke.
  9. Introduce the cherry smoke with the rubber pipe of the smoking gun underneath the grapefruit slice.
  10.   Add cherry nerds candies and a sprout of Rosemary on top of the foam.
