Green Dream

Shake it up in the morning with an easy blend that packs a punch.

You’ll Need:

  • 1 banana
  • 1 big handful of spinach
  • 1 cup almond milk

Now What:

  1. Blend all ingredients and enjoy!

Avocado Toast

In a time crunch, this avo toast is the perfect easy snack and the best combination between crispy and creamy.

You’ll Need:

  • ¼ avocado
  • 1 tablespoon tomato paste
  • 1 shake hot sauce
  • 1 tsp red pepper flakes
  • Fresh black pepper
  • ¼ lemon to juice
  • Bread

Now What:

  1. Toast bread.
  2. Spread tomato paste on toast.
  3. Add avocado.
  4. Squeeze lemon juice.
  5. Top with fresh black pepper, red pepper flakes, and hot sauce.

Vegan French Toast

Treat yourself in the morning with a healthy, vegan version of french toast, satisfying your sweet side but keeping you energized through the day.

You’ll Need:

  • 4 slices Ezekiel or gluten free bread
  • 2 bananas
  • Handful of blueberries
  • 2 cups almond milk
  • Blender
  • Cinnamon
  • Earth Balance butter spread
  • Cast iron skillet (or regular skillet)
  • Maple syrup grade B

Now What:

  1. Blend bananas, milk, and blueberries.
  2. Heat up skillet.
  3. Add a bit of Earth Balance butter to skillet.
  4. Pour mixture into large bowl.
  5. Dip slices of bread into mixture.
  6. Add to skillet.
  7. Cover with cinnamon.
  8. Cook for a few minutes on each side.
  9. Add maple syrup and enjoy!

You’ll need:

  1. 1 handful spinach
  2. ½ avocado
  3. 1 tablespoon hummus
  4. 1 whole wheat wrap
  5. Drizzle of olive oil
  6. ¼ lemon for juicing
  7. Diced tomatoes

Now What:

  • Mash avocado.
  • Combine with hummus.
  • Combine lemon juice and olive oil.
  • Spread mash on wrap.
  • Squeeze juice on spinach.
  • Top with diced tomato.

Veggies Vieques Ceviche

Get a taste of the islands with this super fresh veggie take on a classic Spanish ceviche.

You’ll Need:

  • Veggies
  • 1 cup chickpeas
  • 1 cup broccoli
  • 1 red or orange pepper
  • 3 radishes
  • ¼ cucumber
  • 2 carrotsSauce
  • Juice of 1 lime
  • Juice of 1 lemon
  • ¼ cup olive oil
  • ½ Aji Amarillo

Now What

  1. Chop veggies.
  2. Combine ingredients for sauce in blender.
  3. Mix chickpeas and veggies with sauce.
  4. Chill in fridge for 1 hour.
  5. Enjoy!

Snickerdoodles

Satisfy your craving without the guilt, these sweet treats are totally vegan!

YOU’LL NEED:

  • 1 ¾ cup all-purpose flour
  • ¼ cup cornstarch
  • 1 tsp. baking powder
  • 1 stick (4 oz.) Earth Balance butter
  • ¾ cup sugar
  • ¼ cup vanilla almond milk
  • 1 tsp. vanilla extract
  • Cinnamon Sugar
  • ½ cup sugar
  • 3 Tbs. ground cinnamon

Now what:

  1. Whisk flour, cornstarch, and baking powder in bowl.
  2. Beat together Earth Balance butter and sugar until smooth.
  3. Beat in almond milk and vanilla extract until smooth.
  4. Add dry ingredients. Beat until smooth.
  5. Roll in little balls.
  6. Cover in cinnamon and sugar (combined).
  7. Place on baking sheet.
  8. Bake at 350 degrees for 15-20 minutes.
  9. Let cool and enjoy!
